1. Steamed rice roll with egg
Steamed rice roll is a light breakfast food that is favored by many people. Especially when coming to Lang Son, you can enjoy not only the usual spring rolls but also the famous egg rolls.
It is also coated with rice flour but instead of the wood-ear meat filling, an egg is cracked and put into the middle of the steamer which is later covered with a lid to cook slightly, then the cook uses a bamboo stick to fold the roll and serve. The plate of rolls is sprinkled with attractive minced meat in yellow-brown.
The broth here is not the usual fish sauce, but consists of a bit of dry-roasted ground meat, sprinkled with a little chopped coriander and then poured on the to-taste fish sauce mixed with onion. Especially in the spirit of Lang, each table has an additional jar of chilly pickled bamboo for customers to customize in their own sauce.
2. Toast
Not a traditional dish like roasted duck, but if you are a Lang Son cuisine lover, everyone knows about toast. Don't be surprised, it is just bread, but Lang Son people have made it a delicious, highly addictive snack.
There are many types of toast here such as with and without fillings. The cake is baked through 2 stages, first baked with cooking oil, then added a layer of oyster sauce, honey to the point the toast is dark yellow and delicious.
In addition, the toast sauce is also made very nicely with the spiciness of chili, the sweetness of sugar, the sourness of kumquat, the aroma of cilantro, etc. Dip the crispy bread into a bowl of flavorful sauce, it is easy to eat 2-3 toasts or more if you can. 3. Sour Pho
When mentioning Pho, people will think of Hanoi or Nam Dinh, then sour Pho is a special dish of Lang Son. A traditional bowl of sour Pho in Lang requires more than 10 special ingredients such as Pho noodles, sweet potatoes, pork liver, stomach, bacon with char siu, Chinese sausage, chao dough, peanut, cucumber together with herbs, etc.
Sour Pho, thanks to such a sophisticated process, fully converges the "five spices" with the crunchy, fleshy of potatoes, peanuts, the greasy taste of char siu meat, the spicy of chili, and the coolness of the cucumber, the sourness of the broth, the spiciness of the chili bamboos. This is a dish bearing bold Lang Son identity.
4. Coong phu
If you want to find a warm sweet dish in Lang area, coong phu is a perfect choice. Coong phu is like banh troi and banh troi tau at the same time. It is like banh troi in the beautiful little round dough, and like banh troi tau in the brown sugar water with the fragrant smell of ginger, coconut and peanuts.
Eat a piece of coong phu with a hot, aromatic broth on cold days, you will feel the cold in the mountains seems to drift away very far ... Each bowl of coong phu cake has both baby jackfruit cake and white cake, served with brown liquid cooked from apricot sugar and fragrant ginger then sprinkled with a little coconut grated and ground roasted peanuts.
5. Roasted duck
Roasted duck with honey and leaf is also a famous dish of Lang Son which requires the chef to be skillful and have his own secrets in all stages of duck selection and process. The standard roasted ducks in Lang Son are red and smells wonderful. The meat is soft, sweet and fragrant. The dipped sauce is made from honey-marinated leaves and spices which are secreted in the belly of the duck, adding soy sauce, chili.
Picking up a piece of meat on the plate with the sauce, tourists come to see the soft, sweet meat and the rich flavor of the sauce, making it difficult for people to stop eating. In Lang Son, roasted duck dish is sold in most restaurants and bars.
6. Roasted duck Pho
Along with roast duck, Lang Son also has very special roasted duck Pho that is worth a try. This dish attracts people by name as well as the strange ingredients. Instead of using beef or chicken, the Pho here uses roasted duck pieces with shiny red skin.
Besides each bowl of pho, there is a bowl of roasted duck soup or a bowl of soy sauce to serve the tourists’ taste. In addition, all restaurants have jars of chilly pickled bamboo shoots to eat with. A bowl of roasted duck pho costs about 30,000 VND.
7. Roasted pork with mac mat leaves
Compared to other regions, Lang Son roasted pork has its own unique flavor. After finishing the food processing, the chef stuffed into the stomach of the pig with mac mat leaf, a leaf of the forest used by the Tay and Nung people. Pigs are roasted on a fiery charcoal grill so that all the yellow meat is cooked. People coat the pigs with oil and wild honey. When the pigs are cooked, wipe them over with cloth and then fan them vigorously to let the pig's puffs swell. The crispy outside but tender inside tough meat has an amazing flavor.
8. Khau nhuc
Another strange but no less special dish of Lang country is khau nhuc. Khau nhuc is a unique dish and is considered luxurious by the Nung people here.
The dish requires special cooking skills and distinctive spices like sweet potato and tau soi leaf. The meat must have a beautiful golden-brown color, tender and sweet; the skin must be crispy and aroma is really attractive. Khau nhuc tastes even better when served with sticky rice, gat gu cake or rice.
9. Fresh sausage
Lang Son Sausage is one of the most delicious Chinese sausages. The characteristic flavor of it is unforgettable. This sausage dish is made from marinated pork shoulder, stuffed into the pre-cooked small intestine and then exposed to the sun or put on the charcoal stove until dry.
Sausage after drying will have a dry surface and bright red color, which looks very attractive. Fresh Chinese sausages are very delicious, when frying just add a little fat and then fry on small fire to gold color, then the dish is ready. Fresh sausage is sliced thinly, served with rice or sticky rice, which are very delicious dishes. This dish is also a specialty of the highland during Tet.
10. Chili shoots
The slices of greasy white bamboo shoots mixed with the tiny chili peppers, adding the mac mat fruit, just like that created a special flavor for the pickled chili bamboo shoots. This authentic dish can be found nowhere other than Lang Son.
