Smoked buffalo – The more you eat, the more you love.
Smoked buffalo is a popular food in the Northern mountainous area (Ha Giang specifically). It is often purchased as a gift because of its remarkable and distinctive flavor. It is made from buffalo meat marinated with chilly, ginger and special spices. After seasoning, the meat is put in a stick and placed above the oven. When the meat is dry, it tastes like dried beef but with a stronger flavor.
Thắng dền - warmth on freezing days
Thắng dền is a special snack in Ha Giang made from sticky rice. It looks somewhat like bánh trôi tàu but smaller. The rice is rolled into small round balls with or without bean dumplings. It is boiled and then served with peanuts and syrup made from sugar, coconut and ginger. Enjoying the dish on a chilly day gives a pleasant feel of warmth. Thắng cố - the unique feature of Ha Giang’s cuisine

Au Tau porridge is a dish made from aconitum, which is really poisonous. However the Au tau porridge is very healthy and it can even help cure illnesses. It is H’Mong people’s food which is known to be able to cure flu and this dish is loved by many tourists. Being made from rice, minced pork, broth and herb, au tau porridge has the nutty and savory flavor from aconitum with the spices. The porridge has a bitter flavor but once you get used to that flavor, you can never forget the distinctive taste of this porridge, a traditional food in Ha Giang.
